Recipe – Banana smurf muffins

Nothing is better than baking on weekend morning, so here is my recipe for banana nut muffins – only actually for me it is more like Banana Oat Muffins, because I can’t stand nuts, but just add then if you want them. Also, if you make them on the weekends, you end up having something healthy for breakfast all week! I call them my Banana Smurf muffins, because for some reason, they always form a point, like a little Smurf hat. They’re not blue, mainly because that would be weird. This is not as long as my recipe for pie, but I like recipes better that way, short, easy, and not to mention SWEET!!

BANANA NUT MUFFINS

1 c. flour
1/2 c. regular sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. oatmeal (not quick oats, the real kind)
1 egg, beaten
3 tbsp. butter/margarine, softened
1/2 c. milk
1/2 c. bananas, mashed

Mix all the dry ingredients. Stir in oatmeal. Add remaining ingredients. Stir only until moistened. Fill medium-size muffin pan 2/3 full – be sure to butter the sides of the pan first. Bake at 204 degrees C for about 20 minutes.
